Paella originated in Valencia, and this interactive cooking class offers the authentic recipe, not the tourist version. Participants will learn to prepare traditional Valencian paella with meat and vegetables, just as local families have done for generations. There are no shortcuts, only genuine techniques from Valencian chefs who have been making it since childhood.
The experience begins at Ruzafa Market, a neighborhood treasure where locals purchase fresh ingredients, away from the hustle of Central Market. Then, join a small-group workshop to uncover the secrets: creating the perfect socarrat (the coveted crispy rice crust), using Albufera rice from Valencia’s fields, and expertly balancing saffron.
While the paella cooks, enjoy a sangria-making workshop and taste traditional tapas. Finally, savor the meal with local wine, salad, mistela, and a homemade dessert.
