Gluten Free Pasta Making 10/10 - Overall 5/5! Christian was a fantastic host, instructor and culinary guide. He also is a 10/10 on personality. He is a professional chef and lets you experience his skill with his unique twists on sauces prepared for the session.
If you’re up for a relaxed, environment with “cooking with friends” vibe he’s your guy.
The class starts with a glass of wine and cracking some jokes, so get ready for a relaxed atmosphere where he walks you through the process of prepping his style of gluten free pasta (it’s really good).
This experience is not for someone who wants a ridged by the book cooking class. If you want to have fun, learn how to make fresh noodles, and then eat some really tasty dishes prepped by Christian with your noodles then this is for you!

In unforgettable experience in the heart of Trastevere GF course with Christian - An unforgettable experience in the heart of Trastevere – Second Level Gluten Free Course with Christian
If you think that cooking gluten-free means giving up taste... Christian will change your mind! His second level course was a real immersion in authentic Italian flavors, with a touch of magic and a lot of passion.
We started with zucchini flowers and sage leaves in crispy batter – a fragrant and delicious start. Then the pesto: not the ready-made one, but the real one, made with mortar, fresh basil and good oil. A perfume that filled the space and the heart.
The best challenge? Trofie handmade with gluten-free flour. I had never been able to do them before, yet Christian guided us step by step, with patience and technique. Even as an Italian, I discovered methods that I did not know! The group was international, with very nice American guys – we had a lot of fun.
Then the spaghetti alla chitarra, pulled by hand, with the real Alfredo sauce: butter, Parmesan cheese and no cream! A masterpiece of simplicity and taste.
But the dessert... the dessert was the triumph: a gluten-free tiramisu with homemade ladyfingers, coffee, mascarpone and fresh eggs. One of the best we've ever tasted, period.
The location? A central store on Via Trastevere, full of Italian atmosphere. After the preparation, Christian invited one person per group to film the dishes in the kitchen, also explaining how to fry with cooking water to get the real cream. Chef details, restaurant experience.
Christian has a rare skill and an infectious passion. I will recommend this course to all my gluten free friends – it is hard to find something so authentic, fun and well made.
If you want to learn, laugh, eat well and live a piece of real Italy... this is the course for you!

BOOK IT! - Absolutely AMAZING experience. My husband was very uninterested in going to this initially (doesn't like to/know how to cook well) and he became immersed into the class and learning tips and tricks from Christian within the first few minutes. Christian was able to break the steps down even for a beginner, and involved each and every individual in the class. We had a great time with the family that we were with, drinking the glass of wine provided and enjoying the friendly atmosphere. The end result with the three separate pastas we made was to die for and we were all so full. Christian provided bruschetta that was already pre-made and set up fore us while he prepared the rest of the sauces. My favorite was definitely the dish where he had added an herb (I won't give it away) that surprised us all and made the dish even more mouth watering.
When we finished, Christian recommended a few local spots to walk to and visit because he knew the area so well.
Highly highly recommend, worth the money.
