With everything in its rightful place, we’ll initiate the creation of the Dark Roux for our gumbo. Following the gumbo, we’ll prepare a lighter Roux for the Shrimp Etouffee. Once your dish is artfully arranged, it’s time to savor your creation.\nThe final segment of our class, which might just be the highlight, involves learning to concoct Bananas Foster. The Mardi Gras School of Cooking offers small, intimate, hands-on classes in the French Quarter. These sessions feel more like a dinner party with friends. Our Chefs personally welcome you into the kitchen. From the moment you arrive until you leave, our Chefs are friendly, personable, and entertaining, with impeccable culinary skills.
Our classes require a minimum of 2 participants. Solo travelers can join an existing class. Call us to learn about available sessions.

A great cooking experience in New Orleans - Wow, the Mardi Gras school of cooking was an absolute blast! We had the chance to work with Chef Erika in our own classroom, where we learned the ropes of making roux and gumbo. She was such a fantastic teacher! The whole experience was amazing, and I’d definitely recommend it to anyone visiting New Orleans. Spend a few hours at this cooking school, and you’ll really get a taste of the city’s deliciousness. It was a truly wonderful experience!

AWESOME Experience 10/10 - OMG my friends and I had an amazing time in the Roux cooking class. Raymond was full of personality extremely welcoming and super informative. Although I cook often - I was impressed with the taste of the food. It felt like cooking at home with family. He gave good tips and tricks and has forever changed the way I make rice. He was extremely informative and answered even the most nuanced questions. Really loved the drinks that were available, the timing was perfected, and overall had a great time.
This is not something I would just do once because the food came out just that darn good.
Thanks Ray for making this such a memorable birthday experience for my friends and I :)

Just book it! - We had an amazing time during our cooking class. Our Chef, Jason, was so much fun! He was full of Nola food culture and fun stories. The food was delicious. 10 out of 10!

Do this! - Great time with Chef Jason. Very accommodating with many allergies in our group of 8. Food was very tasty and they give you the recipes so that you can make at home. I highly recommend this experience

A MUST DO when in New Orleans - Ok, where to start???
1. The food: PERFECT. Not just because we cooked it mostly by ourselves, but also, because Raymond was an awesome teacher, full of knowledge, not just about the stuff we were doing but you could asked him anything… The 3 courses consisting of Gumbo, Etouffee and Banana Foster were so yummy. Learned so much about the holy trinity of New Orleans cooking, that letting the meat stick to the pan is actually a good thing and how to create the perfect roux, I am sure, we will try this at home, even though it might be difficult to get the right ingredients. Already bough the sauce, now I just need to find the perfect Andouille to take home to Germany.
2. The Master cook: Raymond, as already mentioned, awesome, lots of tips and tricks and great stories around food, his life and all the rest. Couldn’t imagine a better cooking orchestrator. Supported by a real nice guy (sorry my friend, I forgot your name!!!).
3. The company: WOW. We were lucky to share this experience with 2 really nice couples from Philadelphia (???). Thanks guys, it was a pleasure meeting you and sharing this experience with you.
This is a MUST DO, when in New Orleans.

Delicious food, great chef! - Very informative, friendly chef, we learned a lot about the origin/history of different creole and cajun dishes and specific ingredients. But more importantly we learned how to make really tasty dishes!

The BEST with hands on learning - My husband and I had an amazing adventure with Jason our chef instructor. He was personable, explaining and teaching us Cajun Roux technique. It was the best meal we’ve had in the city and we prepared it. We have had incredible food in NOLA, but this is a highlight we get to take home to use, AND show off to family and friends! This is not a demonstration, this is actual hands on learning!

Excellent Cooking Class in New Orleans ! - Chef Raymond was an excellent teacher and an entertaining story teller! The cooking class was definitely a highlight of our New Orleans trip and we are busy recommending it to everyone! The food was the BEST meal that we had in New Orleans ! We hope to be able to reproduce some of what we learned her at home in Virginia. We learned so much and had a wonderful time! Thank you for such an amazing experience!
