Beautiful Brunch Adventure - My daughter and I spent a wonderful morning on this adventure to celebrate the end of her chemo treatments. We both are from south Louisiana and love to cook. Given that, we still picked up some very useful new tips. We took part in creating a tasty brunch and consuming the fruits of our labor. The meal was not only a taste delight, the company and chatting along the way was equally delightful. We would very much recommend spending a morning on this adventure to anyone.

That’s how my mom and I ended up in Natchez, Mississippi, guided not by a rigid itinerary, but by a shared longing for a weekend together in the heart of the South. We stumbled across Chef Regina’s biscuit-making class while Googling from the sofa... and in that moment, the decision was made. Natchez it was.
What unfolded in Regina’s Kitchen was nothing short of sacred. Yes, we learned how to make biscuits—flaky, golden, soul-hugging biscuits. But we also learned how to fold a French omelet like a love note. We stirred a smoked tomato béchamel sauce that smelled like secrets passed down from generations. We tasted shrimp that kissed the skillet and grits that could make a grown woman weep.
Chef Regina herself? A force. Warm as a Southern morning, sharp as her chef’s knife, and filled to the brim with stories, wisdom, and a humility that made the room feel like home. She welcomed us with open arms and left us feeling like we’d been part of something much bigger than a cooking class. Something ancestral. Something healing.
My mom and I didn’t just learn how to cook that day—we connected more deeply with each other, with the land, with history. We laughed, we cried, we ate like queens.

HIGHLIGHT OF OUR VISIT - It was the highlight of our girlfriend trip. Regina is a delight, and her recipes outstanding. I'd do it again in a heartbeat. The brunch was delicious, and everyone walks out with all her recipes they just enjoyed eating and the knowledge of how to re-create her world-famous biscuits.

So Much More Than Biscuits! - This is an Absolute Must Do Experience for your Natchez Historical Tour ! ♥️
Chef Regina is a Natchez Treasure ! Her Biscuits & Southern Brunch were The. Best. we’ve ever had ! French Omelettes, Gulf Shrimp & Grits, a Smoked Tomato Béchamel Sauce & Our Ahhmazing Biscuits. But her teaching, her stories & her person… are the real way to experience the epitome of southern charm and hospitality ♥️
I also Learned So Many cooking tips & tricks ! Chef Regina is so relaxed and relatable and so willing to share her vast experience with everyone! I believe that it speaks to her lifelong passion & gifting for all things food & hospitality.
We also enjoyed meeting everyone who had signed up for the class. A father and daughter who are local and have known Regina for years ( she catered his wedding!)

Biscuit Making Class...Yes, please! - Chef Regina Charboneau's cooking school is located in a cute store front on 621 Franklin Street, it reminded me of a building in the French Quarter. The layout of the store is classroom on one side and a dining set up on the other side. Chef Regina has an extensive background in hospitality and cooking. She created, owned & even restored restaurants in San Fransico & Natchez. She is an author of 4 cookbooks. Her culinary prowess is extensive, but right now we are FOCUSED on the biscuits.
There were 8 apprentice biscuit makers in our class. Chef started the brunch dishes and then we got down to the business of biscuits. I think that I failed to mention that Chef Reginia was named "the Queen of Biscuits" by the New York Times. This is where it gets "biscuit serious", she rolls/turns the biscuits 7 times. Do you know what 7 turns mean.....biscuit heaven - layered, flakey & delicious! Parts of her biscuit making technique are innovative too. Some of the process, I will not write about because I want you to take the class and witness it for yourself.
We enjoyed our 7 turn biscuits over brunch, where Chef Regina shared with us her cooking journey. Chef Reginia is someone that you want to spend time with & to learn from. She defines Southern Hospitality - gracious, entertaining and welcoming! Over brunch she shared her passion for culinary things & her cooking stories.
Four months after my Natchez trip, I can't count the number of people I have shown the picture of the biscuits too. And yes, the picture does the biscuits justice! My only regret is that I couldn't pack any biscuits to take home with me!

Wonderful experience! - It was absolutely amazing. Perfect in every way. Chef Regina is so personable and welcoming. The food was so good! The biscuits are just the beginning. Learned so much about cooking. The best shrimp and grits I have ever had.
