In my cooking classes I will share all my culinary experiences and techniques with you to prepare traditional dishes. You can choose to set up your cooking class menu to make it to a unique gastronomic gourmet experience for you.

During our class we will cook 4 dishes/ recipes, we can cook the sample menu I mention with this booking but I also will send you a list of many other choices and dishes (once the reservation had been made) so if you wish, you can change the sample menu and set up your own 4 course menu.
I have vegan, gluten free, vegetarian, pesqueterian and many other choices and can adjust to your dietary restrictions.

I offer ‘hands on’ or ‘demonstration cooking classes’ and you can choose what you would prefer and of course all we cook, you can eat too :)

I am internationally certified as:

  1. Professional Cook by the Government of Germany
  2. Chef Educator by World Association of Chefs (WACS)
  3. Graduated with a University degree in Gastronomy, certified by the Secretary of Education of Mexico
  4. Maitre Cusinier by the culinary association of France

I have been working internationally as a Chef since 34 years & and love to share what I know :)

  • ‘Sopa de Tortilla’ (Mexican Tortilla/Aztec soup) - Chicken/tomatoe broth, served with fried Pasilla chili, corn chips, avocado, cream and fresh ranchero cheese)
  • Enchiladas Verdes - with chicken stuffed Corn Tortilla covered with a green Tomatillo - Chili sauce, topped with lettuce, avocado, mexican cream & fresh ranchero cheese
  • ‘Pescado a la Veracruzana’ (Veracruz Style snapper filet) - steamed inside a banana leaf, with a rich tomato sauce which includes olives, capers, bell peppers, onion & more
  • ‘Buñuelos’ (Mexican Fritters served with a syrup sauce) - made with piloncillo sugar, guava fruit, citrus fruit, anise, cinnamon, vanilla and more

Once was not enough! - Wonderful class. Even though I went with 2 friends who are far more trained than I, we all learned something. David's approach is educational but fun. You appreciate how Mexican cuisine really evolved and where different things come from. When it comes to the cooking, we did just enough to feel a part of it, but we particularly enjoyed the eating! I feel like I could do another of his classes and it would remain pretty fresh. Great value for the price and highly recommend.

Sensational! - David classes and services are not 5 star they are 100! His knowledge about food as a whole including cooking, growing and history of it in vast like Mexico! It's a professional class not random cooking. I leaned so much about the food I love, how to make it and many techniques and tips I can use in my home cooking. He is amazing warm and kind person who love to share his knowledge with you. I took four of his classes. Cutting and cooking techniques tidy up my random knowledge. Market tour was sensational with all local ingredients you will use later in a class, herbs and spices etc. David know the history of every food he cook and also about the town . My pre Spanish classes are tomorrow where I will learn a true Mexican way of making and cooking their food. And last will be current Mexican style class. David can teach you cook anything in your dietary requirements! I'm vegan and gf and I'm in absolutely cooking heaven!

Private cooking class in SMA - We had a culturally enriching experience with Chef David in SMA - we were a group of 8 including children. He was engaging and instructive. He tailored some of the recipes For the vegetarians in our group. While we learned cooking techniques and recipes for Mexican cuisine, we also learned about Mexican history . Overall, this was a highlight of our trip , and we would recommend Chef David’s cooking class to anyone visiting SMA! We cannot wait to make his dishes back home ( he shares his recipes)!

An informative lesson in Mexican cooking. - Chef was informative and interesting and engaging. We were able to choose 4 dishes to make from a very long list and enjoyed making and eating them although it was too much food! Really fun.

Yum! - Chef David provided historical context of the food and traditions of Mexico. He was very informative on techniques and taught us several useful new skills. The recipes were delicious and he quickly followed up our session to provide them via email.

Awesome experience! - Chef David really made this a memorable experience. He taught so much about the Mexican history and cuisine. The dishes we prepared were so delicious and very plentiful. We all left very full and satisfied! Highly recommend this cooking experience as a must-do when in San Miguel!
