Ikarian cuisine, which is predominantly vegetarian (plant-based), highlights fresh vegetables and organic ingredients like legumes, cereals, and flours, along with fresh (and sometimes dried) aromatic plants and herbs that are rich in nutrients and offer unique flavors and aromas. Olive oil is primarily added towards the end of cooking. Most dishes are prepared in a wood oven. Meat is rarely used, and when it is, it comes exclusively from the farm. Fish is more frequently included in the menu and is exceptionally fresh, sourced directly from Ikaria’s fishermen. The farm produces 100% of the fruits, vegetables, aromatic herbs, goat’s cheese, eggs, olive oil, and olives. The bread is pre-leavened and made from 100% Greek flours of ancient origin. These pure ingredients, combined with the light cooking methods traditional in Ikaria, result in food that retains its full nutritional value, including antioxidants, enzymes, vitamins, and minerals.
