And I thought I knew oysters. - Mid-September on the Maine coast: perfect weather, unforgettable views, the company of good friends and, to cap it off, an evening spent enjoying — and learning about — local oysters. Virginia and her partner Warwick (pronounced 'Worrick' NOT 'War-wick') teamed up to provide a tasty and entertaining experience. The educational component provided enjoyably by Virginia, took us to three ecologically distinct areas of coastal Maine where the ocean environment, "merroir", and the differing approaches of the oyster growers produce bivalves with distinctive characteristics of flavor, mouthfeel and taste. Our tastings were accompanied by wines chosen specifically to complement the differences among the oysters we tasted. Warwick shucked the oysters expertly and generously showed us the little "tricks" to guarantee a perfect presentation. I can't wait to get my hands on an oyster knife and a sack of oysters to try to emulate his skill — or amputate a finger! Between oyster tasting, we enjoyed delectable focaccia baked that very day by Warwick. Not a crumb was left of the two loaves! This was such an enjoyable, and educational, evening. So enjoyable in fact that our new oyster knowledge seemed to enter our brains by osmosis. Just in case, however, Virginia provided each guest with an oyster tasting wheel from the Oyster Master Guild and a specially designed notebook in which to record our oyster adventures. This wonderful experience will certainly be a repeat for us. We'll see you next year. Thank you Virginia and Warwick. We all learned a lot and had a fabulous time doing so.

Amazing, Romantic, Delicious & Educating all at once! - Virginia took us to a place we’ve never been, deep into the world of oysters. I have eaten many oysters but now I have an entirely new appreciation for these bivalves! My wife and I sat down to a romantic sunset rooftop oyster class watching an Osprey just 50’ from us flyby while sipping bubbles, eating bread from a local bakery, with perfectly tempered salted butter and cherry tomatoes from Virginia’s garden that literally bursted with tomato flavor in your mouth. We sampled oysters from 3 different local areas and even though they were all within 10 miles of each were so different tasting. I learned to smell, then sip, then chew, then taste and then savor the taste, like you would a fine wine. I’ve been rushing my oyster eating my entire life. I now know a fresh oyster from a not so fresh oyster. So educating without over doing it, Virginia is enthusiastic, entertaining and professional, the perfect host. I will remember this experience the rest of our traveling days. I highly recommend this exceptional tasting.

A unique and charming aquaculture adventure! - Friends, if you love oysters and the Maine coast, RUN to this charming, hidden gem in beautiful Phippsburg, Maine. I booked a 3-hour birthday adventure for my fiance and several of our friends this summer and we were not disappointed. Captain Joe took us out on his boat to visit a local oyster farm, where we learned all about the Maine aquaculture and how to shuck oysters with grace. The best part was slurping oysters fresh from the sea, garnished with some of Captain Joe's homemade mignonette. Chef's kiss! I swear oysters have never tasted better. Virginia was incredibly sweet, and accommodating to our party, welcoming us on the dock to start the evening. We will definitely be back to do an indoor oyster tasting with Virginia this fall.

One-of-a-Kind Oyster Adventure - What an unforgettable experience! As an oyster lover, I’ve never had the chance to get so up close and personal with them before. Huge thanks to the incredibly knowledgeable Virginia, master chef Warrick, and the entire team for making this team-building activity exceed all expectations. From the champagne welcome to the lobster feast, every moment was special and full of information. Exploring the oyster farm, tasting varieties from different farms, and learning how to evaluate them gave me an entirely new appreciation. The wine pairings were spot on, and Virginia’s enthusiasm made it even more special. Highly recommend booking this experience!

Come for the oysters stay for the focaccia - The oyster tour, tasting, and lobster dinner was the perfect half day business team building activity. Our group of 9 loved this fun, informative, and tasty event. Virginia is super knowledgeable about oysters and her enthusiasm is contagious. Warrick’s focaccia bread is the best I have ever tasted! Seriously if you find yourself within 500 miles of Bath, Maine a visit to Lady Oyster is well worth it!

Great oyster tasting - Virginia and her husband were great hosts. We had a great time chatting with them about oysters and many other topics. They’re both very friendly, hospitable, and knowledgeable. Learned a lot about oysters and had three farms’ oysters to compare - which were all very good - and learned the differences between them. I hope it can translate to when I get home and order them in real life.

Amazing Culinary Adventure in Maine - My husband set up this culinary adventure - I really didn’t know what to expect and have always been more than a little leery about eating raw oysters. Warm and welcoming, Virginia weaves gracious hospitality with her vast knowledge of all things oysters to create an almost magical experience. She leads you through topics including oyster etiquette (super grateful for that!), the elements of oyster tasting, and the impact of location on an oyster’s flavor. I ended up enjoying each and every oyster she shucked as she entertained and educated us at our beautifully set table. We are not big wine drinkers, so Virginia introduced us to a great summer ale. We learned so much and I am grateful for my new found appreciation of the oyster. I also have to mention when you arrive you will find the views and atmosphere of Lady Oyster’s rooftop dining space simply breathtaking! From the fishing boats, to the docks, to the peaceful sunset - incredible!
