Biscuit Making Class...Yes, please! - Chef Regina Charboneau's cooking school is located in a cute store front on 621 Franklin Street, it reminded me of a building in the French Quarter. The layout of the store is classroom on one side and a dining set up on the other side. Chef Regina has an extensive background in hospitality and cooking. She created, owned & even restored restaurants in San Fransico & Natchez. She is an author of 4 cookbooks. Her culinary prowess is extensive, but right now we are FOCUSED on the biscuits. There were 8 apprentice biscuit makers in our class. Chef started the brunch dishes and then we got down to the business of biscuits. I think that I failed to mention that Chef Reginia was named "the Queen of Biscuits" by the New York Times. This is where it gets "biscuit serious", she rolls/turns the biscuits 7 times. Do you know what 7 turns mean.....biscuit heaven - layered, flakey & delicious! Parts of her biscuit making technique are innovative too. Some of the process, I will not write about because I want you to take the class and witness it for yourself. We enjoyed our 7 turn biscuits over brunch, where Chef Regina shared with us her cooking journey. Chef Reginia is someone that you want to spend time with & to learn from. She defines Southern Hospitality - gracious, entertaining and welcoming! Over brunch she shared her passion for culinary things & her cooking stories. Four months after my Natchez trip, I can't count the number of people I have shown the picture of the biscuits too. And yes, the picture does the biscuits justice! My only regret is that I couldn't pack any biscuits to take home with me!

Cooking with the Best - While visiting in Natchez I looked up my sweet friend, Regina and took her cooking class on how to make the best biscuits you have ever had in your life. Not only was the class hands on and instructional it was fun and entertaining. All the other guests enjoyed the class and food as much as I did! Regina is a first class chef from Natchez to Paris, around the globe and back. The food she prepared for us was exceptionally delicious. If you’re a foodie, you’ve got to put this on your bucket list! Enjoy!

Brunch at Its Best - Three couples had the best start to our day in Natchez. We arrived and brought on our own libations. We also brought our own aprons, but she does have some if you need them. Very relaxed atmosphere. Regina taught us how to make biscuits, and we can never eat another type of biscuit again! We all even got a turn at helping. She also taught us how to make shrimp and grits and a great omelet recipe. Regina has had so many great experiences, so to hear her stories was a wonderful addition to the class. She was a perfect hostess! When all was said and done, we got to enjoy the food we prepared and left with a tea towel with the biscuit recipe that will be used to make the biscuits and a biscuit cutter. We were all so excited about the class, we wore our aprons for the rest of the day as we toured Natchez.
