In the charming Condesa home of an expert guide, participants will delve into the rich variety of Mexican moles before putting on an apron to create two of the most delicious versions from scratch.
After approximately two hours, the table will be set with exquisite, locally-crafted dinnerware to savor a sumptuous manchamanteles, or “tablecloth stainer.” This dish shares some ingredients and techniques with the renowned mole poblano but offers a delightful sweetness from generous chunks of tropical pineapple and plantain instead of chocolate. Additionally, a refreshing green mole, made with a base of fresh green leaves like spinach, cilantro, parsley, epazote, and more, provides a lighter alternative to the traditionally heavier moles.
Dietary needs will be accommodated, and Mexican beer and soft drinks will be available to keep everyone refreshed throughout the experience.
While wheelchair users have attended the class before, please note that the building lacks an elevator. Allergy sufferers should be aware that there are two cats in the house.
