At Flow, our contemporary taproom, we invite you into a rarely seen, cozy space. In this tranquil environment, you will delve into chōgō—the post-fermentation blending process, revealing a concealed layer of sake craftsmanship.
The session, led by a brewery team member certified in WSET Level 3 Sake, starts with an informative English lecture on sake production and how techniques influence flavor. You will then sample five unique sakes: our signature Jozen Mizuno Gotoshi and four others—highlighting dryness, sweetness, richness, and acidity—each showcasing a different flavor profile.
Under the guidance of your host, you will create a blend that mirrors your taste and creativity. Unsure where to start? Select from recipes by our master brewer Takaki Matsumoto, designed for various moods and preferences.
