They are committed to reviving rare grape varieties from Crete, featuring a portfolio of over 11 indigenous varieties, including three that have been rescued from extinction. As champions of sustainability, they transitioned to organic viticulture in 2020. As part of their regenerative practices, they have ceased ploughing the land and exclusively use their own fertilizer, made from organic waste sourced from their kitchen, winemaking process, and nearby oil mills.
