To all the Pasta Lovers from around the world: this is the perfect experience for you! Join us in an exclusive small group cooking class at a real Tuscan Trattoria and learn to cook tagliatelle, ravioli and tiramisù from scratch. Meet us in Florence’s heart, then venture with our chef to Sant’Ambrogio food market to look for the finest ingredients (only included in the 9.00 am shift). After gathering all necessities, return to the kitchen, don your apron, and dive into sauce-making—ragù and classic tomato. While they simmer, knead pasta dough to perfection under the chef’s guidance. Once achieved, set aside to rest and delve into crafting tiramisù, the beloved Italian dessert. While it chills, enjoy Tuscan appetizers and tales of culinary tradition. Then, back to pasta: master tagliatelle and stuffed ravioli with ricotta. Season, and finally, savor the fruits of your labor with a glass of fine wine. Buon appetito, and don’t forget to make scarpetta!

  • The afternoon option (2.30 pm) does not include the visit to Sant’Ambrogio Market and lasts a total of 3 hours and 30 minutes

Great activity to do with teenagers! - I was travelling with my twin 15 year old girls and this was our first time in Italy. This was a highlight of our visit to Florence! Matteo is a very interesting chef/ teacher with a great sense of humour. We had a great time and the results were very tasty!!

Excellent pasta cooking course with Matteo - Yes, we absolutely enjoyed the tour. Matteo was an amazing teacher for us. He made us a part of every step in the procedure of making pasta and tiramisu by asking us questions and explaining why the things are done the way they are. Even if something did not go the way it should, he said what needs to be done and let us try to fix it ourselves. We had a blast talking to him even after we finished our self made meal, so we can only recommend this pasta cooking course!

The chef, the trattoria, the wine and food. - What colour should bolognaise be, light red, dark red or brown? How long should pasta rest for? Are tomatoes used in bolognaise? What is the best biscuit for Tiramisu? How much olive oil should be used to cook ? The answers, along with the origins of pasta, that stirring is ‘the devil’, and that garlic should be roasted with the skin on (so that the flavour infuses the meat and doesn’t overwhelm it), were enlightening and demonstrated the many misconceptions we have held over the years in relation to cooking. The one rule that remains true, is that you should only cook with a wine you would drink. We confirmed the quality of the wine…. a few times. We met Matteo, our Italian chef, whose previous work has included being a Head Chef, and working a Sous Chef at a Michelin Star restaurant. Matteo walked us through the fresh food markets to select the ingredients for today’s lunch, then he invited us into his trattoria to prepare the meal. The experience has been one of our most entertaining, informative, relaxed and delightful experience we have had over the last 30 days in Europe. We learnt the origins of the meals we prepared, the cooking techniques required to bring out the flavours of the ingredients, without over complicating the dish, and we challenged many of our Italian cuisines and general cooking preconceptions. The teaching was excellent and we were rewarded with a lunch comprised of home made pasta, bolognaise, tortellini and tiramisu. The process of cooking and the lunch was accompanied with a simple yet very nice Tuscan wine and fantastic company. We are looking forward to hosting many Italian themed dinners in the future.

Fun cooking experience - So fun and easy to learn authentic cooking. It was a wonderfully different and enjoyable experience with my wife, as we rarely spend time cooking together. Will be something we can do together. The chef was knowledgeable and a pleasure to learn from. All the participants had a great team. Worth the money and time. Friendly Chef who includes the whole group in the cooking experience. Made to feel welcome 🇳🇿NZ - What a fantastic Chef. This experience was more than I thought it would be. Great value for money and I learnt so much. Totally worth the money and would recommend this experience to anyone wanting to learn about the food, the culture and of course eating the delicious food you make! The market visit in the morning was great and very informative. Such a cool guy wanting to pass on his trade and passion to others. 🇮🇹🇳🇿

Convivial and delicious. - Matthew was a very good teacher. And the pasta was delicious. We were not rushed out at the end, enjoying a very convivial atmosphere with the small class of students (there were 6 of us in total) while we consumed our creations.
