Each wheel of Parmigiano Reggiano holds more than meets the eye, thanks to the complex traditional recipe and the controlled conditions throughout the process.
Witness cheese makers in action and observe the entire process. The factory tour will lead you to the aging room (‘stagionatura’ in Italian), where you will admire rows and columns of cheese wheels filling the air with their aroma. The factory produces a variety of cheeses, all organic.
The tour concludes with a tasting of different types of Parmesan Cheese and ricotta, accompanied by local products.

- Marano sul Panaro - Prosciuttificio Leonardi was established in 1988, drawing from extensive experience in pork slaughtering and processing. That same year, the company joined Modena’s “D.O.P.” Prosciutto Consortium, ensuring all products are labeled according to the PDO (Protected Designation of Origin) EU product quality scheme. This factory is committed to high biological production standards and produces exquisite dry-cured hams. It is a trusted supplier for Gucci restaurant in Florence and Massimo Bottura’s top-class restaurants.
Tour the factory, visit the production rooms, and learn about ham processing, from receiving the meat to the final product. The visit concludes with a tasting of a wide range of their products: both raw and cooked hams, such as culatta, lardo, salami, prosciutto cotto, and prosciutto al tartufo.
