Workshops continue with a tour of the souk where everyone can complete his knowledge on the use of herbs and spices in Moroccan cuisine. Finally, the day ends in our oriental lounge by tasting of the prepared dishes.

Fun tagine-cooking experience - There were 7 of us (max 8) and we prepared and cooked a lamb tagine and vegetable briouat (little triangular filled pastries) over the course of a morning. While the tagines continued to cook we were taken to a spice stall in the medina where the owner, Mohammed Seddiki, gave us a fascinating tour of his shelves. Then back to L'atelier for the finishing flourish - eating our results over lunch! Very well organised; instruction in French and English - all materials prepared and ready to chop/ prepare at immaculately clean work-stations. Aysha was our local chef instructor, ably supported by Izzac (who also took us round the medina). 600 dirhams (about £50) per person. A really interesting experience offering fascinating insights to culinary aspects of Morocco.

A beautiful side of Essaouria - The food we ended up cooking tasted amazing, but the experience of preparing it and learning about the Moroccan culture was even better! From the preparation of the tea when we arrived, to the trip to the souks to learn about spices, we felt like we have seen a part of Essaouria and Morocco that we haven't experienced before. The hosts were knowledgeable, friendly, helpful and very very welcoming. The instruction was bilingual, in perfect French and English and different levels of cooking ability were catered for. The kitchen was beautiful, all the utensils clean and sharp and the pace of the course was good. Some of our course mates had already booked more courses with the same school. Amazing. - Amazing Moma the great perfectionist chef, demanding who breaks you and makes a thousand times the leather of Gacel until it comes out perfect, friendly until rage that teaches you if or if.

Great opportunity to learn about Moroccan cuisine and have a great lunch - What a fabulous experience with very knowledgeable friendly ladies who took us through a mint tea ceremony, a lamb tagine and briouats. All were delicious and we enjoyed the trip to the market for spices as well. Merci beaucoup

Moroccan cooking class extraordinaire - We greatly enjoyed this cooking class. It was a nice size and very professionally run. It was nice having Maryam and the chef to explain and guide us. The space was lovely and everything was laid out and ready when we arrived, and they were kind and engaging answering questions that they must get all the time! A nice bonus was a wonderful trip to a spice shop where we learned about many different spices and their uses. I have never experienced such fresh spices! We will definitely be back to Essaouira and would enjoy taking another class at l’Atelier since I would like to learn to make couscous. Highly recommend — and they are fluent in French and English.

A first class cooking class with first class Staff and facilities - My travel agent booked me onto this cooking class and I am so glad she did. As I booked first I chose the menu for the group, briouats followed by chicken Tagine with lemon and olives. Miriam was out hostess along with the chef who’s name escapes me. There were nine of us in the group. The class was conducted in French and English and always with lots of useful information. We started off the Moroccan way with mint tea. Then prepared the filling for the briouats followed by the Tagine. Each step was well explained. The kitchen is so well set up it was a delight to be there. Once all the food was prepared we headed out to soul to me Mohammed, our spice expert. He was brilliant. We went into his tiny shop where he let us smell so many spices. We were so enamoured by his enthusiasm and knowledge we went back and bought a selection to take home. Back to L’Atelier where we all sat down for lunch and ate what we had made. My husband joined us for the meal and declared my efforts a success. This school was one of the nicest I have been to. And I return home with some new skills.

Competent but cold - Pros Beautiful workspace Great location Great for english and french speakers Visit to the market Cons It lacked heart and was mechanical. Our prior experiences with cookery schools overseas were great social experiences. The hosts also imparted a proud introduction to the food culture of their country—not just how the dish was made but more of when, where, and why it was eaten—special occasions—their own family experiences etc. The hosts left us alone to eat as a group and the conversation was stilted and awkward. The meal was pastries and a standalone chicken tagine. For the price I was hoping for a vegetable dish The hosts seemed to be on their phones when not explaining. Did not seem to enjoy interacting with guests Overall I wish I had tried one of the cheaper experiences in Essaouira perhaps I would have learnt more about Morrocan cuisine
