  • The Cumberland Bar - You will be welcomed to a bespoke micro distillery room where you will receive a rum and mixer on arrival. Guests will be allowed to settle in with a run through of the outline of the class. Each guest will then try three different rum tasting samples and then design their own bespoke rum recipe from the available ingredients. Guests will then use an individual mini copper still to distill their chosen ingredients to produce a 500ml (50cl) bottle of rum to take home with them. While their rum is distilling they will enjoy a cocktail and once their rum has been distilled, they will taste their newly made rum before bottling, labelling, naming and wax sealing their end product to take away with them.

Additional Information

This rum distilling experience is a very hands on, bespoke, personal and very knowledgeable workshop like no other in the country. Upon entry to the building you will be warmly greeted by your host upstairs at the main entrance. You shall then be guided to our bespoke micro distillery and once settled you are given a welcome rum and mixer followed by a brief outline of the running of the experience and history of the distillery. Next comes a short history of rums from around the world and a rum tasting section to help you come up with a rum recipe to distill your bottle of rum. Guests then pick a total of 6-10 ingredients from our botanical library to help them create and distill their own rum bottle. While distillation takes place, guests enjoy a rum cocktail. When distillation finishes, guest bottle their rum, add a label with their chosen rum name and finally wax seal their bottle to take away with them.

Who knew you could distill your own rum? A unique and fun class. - We had a blast!! Neil was the perfect host! We Learned a lot about the history of rum (rhum) and had the best time making our own! We will recommend this experience to any friends traveling to Edinburgh.

The best make your own Rum in town expierence! - What an amazing expierence! Neil was extremely knowledgeable on all things Rum and made us feel super welcome! We had so much fun throughout the afternoon and the amazing rum cocktails topped it all! Thank you so much for all the puns and dad jokes! We would highly recommend the rum expierence to anyone!

Great fun experience! - We had a fantastic Rum School session with Neil this week. A great mix of history, storytelling, rum facts and fun. Oh and rum! :) He was a friendly and extremely knowledgeable host - would thoroughly recommend. Ideal for rum lovers or those that want to find out more.

Highly recommended: rum school of Neil - Great afternoon! Neil had plenty of time for the two of us and we both ended up making our own bottle of rum. After explanation, a lesson in history and a lot of smelling started distilling Koala Magic & Captain Jaap 🥃🥃

Fantastic fun and informative experience! - Fantastic, informative and fun experience with Neil who was so enthusiastic, knowledgeable and entertaining. We learned so much about the origins and varieties of rum but in a relaxed, informal and fun way. Sampled different flavourings which culminated in distilling our own rum recipe. Thoroughly recommend 👌.

100% recommend - esp with Neil - I didn’t know what to expect but it totally surpassed my expectations. Neil was our host and he was so so good. It was just me, my husband and Neil so we were able to really enjoy our time and go deep into the history of rum. Neil is extremely knowledgeable and he’s funny to boot. We ended up staying there for a little over 4 hours lol. I would definitely recommend - one of the most memorable parts of our trip to Edinburgh.

Excellent afternoon tasting and making rum - Great afternoon with Neil at the Rum School, Edinburgh. Neil was extremely informative about the history of rum and gave us a taste of the different styles of rum before helping us to make our own distillation using the variety of botanicals available.
