- Valle Ojos Negros - The tour kicks off at 11:00 a.m. with a convenient pickup from your hotel in Ensenada or Valle de Guadalupe. Just outside Ensenada, the charming Ojos Negros Valley, known for its vineyards, cheeses, and entertainment, awaits in Baja California. This picturesque and storied valley stretches 40 kilometers east of Ensenada. The area is adorned with stunning white rock mountains and lush, fertile land perfect for growing top-quality vegetables and fruits. Legend has it that in 1870, a prospector named Ambrosio Castillo discovered a gold nugget here, leading to the establishment of a gold vein. This discovery attracted thousands of adventurers, giving rise to Real del Castillo, which became the capital of the then-territory of Baja California during the gold rush.
- La Cava de Marcelo - The first stop is La Cava de Marcelo, the leading producer of artisan cheeses in Baja California. Renowned internationally for its exceptional quality, this establishment has been operating since 1911. Guests will enjoy a guided tour to learn about crop production, livestock care, cheese preparation, family history, and partake in cheese and wine tasting in the cellar. The brand, Quesos Ramonetti, offers a variety of natural cheeses: Fresh, with Basil, with Rosemary, with Pepper, Aged 6 months, 1 and 2 years, and Ricotta and butter of the highest quality. Some of these will be included in the tasting, allowing guests to sample the finest selections. The tour continues with lunch at Restaurant La Casa Marcelo (at your own expense), which features a modern twist on traditional Mexican flavors using the best local ingredients from Ojos Negros and Valle de Guadalupe.
